Mk2 GT Cortina variants

G'day all, long time no chat. The old TD's still safe and sound enjoying her old age... Just finishing off the RS2000 at the moment and am starting to look for a new project which leads me to a few questions. Thinking about a Mk2 GT, I'm noticing some pretty plain looking ones and then some dressed up with quarter bumpers, bumperettes and GT side and bonnet stripes. I'm keen on the later, where these options or year differences? any ideas whether any years or body styles (sedan or coupe) are rarer than others? and what should I be looking for on the vin plates?
Any help or advice appreciated before the hunting begins...
