Hey mate if it was me I would just get some extractors and a 2 1/2 " system, alloy head & get a redline manifold (the old cain style) with a 350 holley or run a XF twin webber & manfold.

You should consider chucking in a efi cam or a high torque job for a bit more poke.

Any extractors are better than stock just make sure you get Cortina ones not falcon ones if you are looking around second hand.

2.25" exhaust is more than enough unless you have significant upgrades planned later.

320 or 350 Holley carb work well for good fuel economy and reasonable power gain.  Make sure you get someone to dyno tune it and jet it though or you won't gain anything.

I would consider going alloy head also as CortinaD suggested.
There are huge improvements in valve and port design plus they save a huge amount of weight.

I had the setup CortinaD is talking about, 2 1/2 exhaust, redline torquer manifold and a 350 holley, went good, goes better now though, used a redline adaptor and put the xf weber on it, gets better fuel economy to as it runs single barrel to about 60% throttle (unless you boot it everywhere ;-)). Only problem is clearence, i already had a hole on the bonet from the previouse owner so i was right.
