The usual is to get a 350 Holley 2 stage(pollution type if you can get it).

Though I have seen people on here use the later Webers of a Falcon, and you could set these up to be legal with the pollution gear.

I've had both the 350 Holley and the Later Ford Weber from the XE/XF. A lot of people swear by the Holley but personally ive found the Weber to be better on fuel for cruising as well as a bit of extra poke when you put your foot into it. Bonus of the weber is you dont run both throats all the time, the second comes in at about 60% throttle.
Most people get the standard manifold to suit, me im running it on the redline manifold with an adaptor plate (will get clearence issues, i have a hole in the bonet for my scoop so it doesnt worry me.

imo the xe/xf weber is a better proposition. holley is a metered fuel leak. if you have an alloy head then the standard manifold and carby will bolt straight on with the only issue being the egr pipe should you decide not to disconnect it.

Go the weber direction. I think I had a cain manifold with the standard air cleaner setup, only just fit under bonnet slight rub on bonnet if driven hard.
